LET THE GARI-PARCHING BEGIN!


The cassava flake's fermented and ready to go so it's time for Hope Team Mile Six to make some gari! Completing the final stages of turning humble cassava into quality gari the team press the fermented cassava flakes in the gari-press. Then the fire's lit and pan's oiled and Skinny and Stubborn, our seasoned Mende gari-makers, work their artisan magic, skillfully shifting the cassava flakes around and around the pan over a low heat drying without catching and colouring until just the right crackle's obtained before the still snow-white gari is sifted through our sieve ensuring an even size. This delicious nutritious drought-resistant crop is helping rural communities in Sierra Leone adapt to climate change and the dangers of more intense dry seasons andmore fequent droughts.
